Homework Procrastination

I really need to be writing a paper about Aphra Behn’s shorty stories, but I decided to make breakfast and a short post about my breakfast from Friday.

I spent the most of Friday (before work) reading books for school, but I took a bit of time to make a not-so-fancy breakfast.

Dunkin' Donut Croissant

On Thursday after my doctor’s appointment, I grabbed a croissant from Dunkin’ Donuts. I heated it up, drizzled a bit of peanut butter and honey over the top, and sprinkled it with cinnamon. I paired it with cashews and a stick of cheese. I also had a few cups of berry green tea. It was quick, easy, and delicious.

This morning I got up and started research for my Behn paper, but stopped to fix a quick and filling bite to eat. I scrambled some egg whites and a couple whole eggs with lemon rosemary, garlic, salt, and pepper. I made a protein smoothie shake thing with Vanilla quest protein powder, frozen yogurt cubes, chilled coffee, almond milk, and vanilla syrup. I also added a serving of my vanilla latte Pro Shake and a teaspoon of coconut sugar because it was a tad bitter. It ended up tasting like a frappe! So yum!

Now, I sadly have to go back to my school work before I go to work!

Swamped :: A School Story & Mini Catch Up

I have been beyond swamped so far this semester! I’m only taking four classes, but three of them have an overwhelming load because they are graduate level classes.

  
 I’m so impressed by the amount of work grad students accomplish for class, along with their personal life, and working. I had three papers due last week and two more this week. Crazy!! 

  
I’ve been relying so much on caffeine and sugary drinks lately. I know after his semester I’ll have to seriously cute back!

I have a few post ideas that I’ve written up but I’m missing pictures for them still. I’m going to try and knock those out in the next few days and some for backup posts when I’m super swamped. 

One way I keep school from getting too overwhelming is to pamper myself while I work. When I’m up late writing papers or studying I do a face or hair mask. 

  
The other night I pulled out my latest favorite :: Boscia’s Luminizing Black Mask. It’s amazing. You put a thick, opaque layer of the mask on and let it sit for at least 30 minutes. It dries slowly and peels off cleanly. It worked like a pore strip, but less abrasive! After pulling it out, I gently scrub my skin. My pores look half the size they were. This is going to be a new staple in my mask collection. 

  
I’ve also been working a ton! Which is great because it means I can go shopping 🙂

    
Marley had her birthday party today! She turns four on 10-5, but we had her party early because my strap dad will be out of the country on her birthday week. 

I’m also loving the combo of my new camo shirt, my pink suede anorak jacket, and my bullet necklace from Half United.

I love that IPSY choose that theme for this month given that it is fashion week month. That sounds like an oxymoron, right? Haha, but it is Fashion Week time! I love them. I love looking at all of the different shows, ready to wear collections, and celeb pictures.

*Also, the pictures are a little wacky. I accidentally deleted some so I had to retake them & forgot to clean my lens. Oops!

My favorite thing from this month’s bag is the one I’m giving away: Formula X’s nail lacquer in the shade Ignite. That seems strange, right? It’s just that I have six – yep, you’ve read that right, six – other nail products in this or very close to this color. I love it. The lovely Fall cranberry/merot/almost cherry shade is my winter go to. Formula X has amazing lacquers; they are long lasting, hold color well, and don’t chip too easy.

Not Soap Radio included this amazing smelling lotion called The Phoenix in the scent persimmon and plum. This is one of my favorite scents I’ve found in a long time. It doesn’t leave behind a grease-y feel like some lotion does, it absorbs quickly, and the scent is subtle and long lasting.

Another lotion was included, this one for the face and neck, by Bayberry Naturals. They had me before I even opened the bottle. The lotion is 81% organic, 100% vegan, formulated without sulfates, parabens, and artificial fragrances. I try very hard to put well made products on my skin in order to help it be the best it can be and this product seemed like a great candidate to add into that routine, until I opened it up. The lotion was super runny but left a grease-y residue and an unpleasant smell. This product wasn’t for me, but for a different skin type, this lotion would be perfect.

The NYX & IPSY collab eyeshadow trio included is great. It has two shimmers and one matte. The shimmers are browns, one gold and the other a bronze color, and the matte is a dark brownish green color – I cannot pinpoint the exact shade. I think I will probably use the gold shimmer frequently.

I really like the Liptini lipstick that was included. It was a fun, fall shade called starlet cocktail and is a lighter merlot shade. This is a must have shade for me during the fall and since this lipstick is moisturizing and soft, I know I will be using it all the time.

As always, I was super delighted when my Love with Food box came, and this month’s theme was Smarty Pants. Perfect since so many people, myself included, are going back to school around this time. And, Love with Food always tries to include smart choices!

I was unsure about the Snapea Crisps from Calbee. I really like snap peas in my Asian food, but I had never had them like this. I split these with my mom because she LOVES snap peas. She frequently buys them and munches on them. Each pack packs a punch (love consonance) at 90 calories, 4 grams of protein, less than 1 gram of sugar, and 3.5 grams of fat. I don’t know if I would buy these again, but I know my mom would!

I was really excited for the Snack Factory’s Pretzel Crisps Minis. They are gluten free and each baggie (1 oz serving) is 110 calories with 3 grams of fat, 1 gram of sugar, and zero grams of protein. I love to pair these with hummus and cheese for a quick snack. I know I will be grabbing more of these soon to pop in my school bag.

I was super iffy on the fruit snacks from Yum Earth Organics. During my subscription with Love with Food, I have received a lot of gummy snacks. Since I live with a three year old, I know that not all gummy snacks are created equal. Most have way too many sugars and zero nutrients despite their claims otherwise. I think it I cool that these gummies are nut free, soy free, dairy free, and 100% vegan. These would be great for kids that have tons of allergies but still want traditional kid snacks. Marley loved these! Cody even enjoyed them – haha!

A sample pack of Smarty Pants adult gummy vitamins was included. I have a love hate relationship with adult gummy vitamins. I make sure to take all my necessary vitamins, so when I first started doing this I was intrigued by the idea of gummy vitamins. However, they are filled with unneeded sugars (8 grams for a serving of these) and calories (50 calories for a serving of these). But, if you hate swallowing pills or have an issue with them, these are a great alternative for you. Or for tweens making the switch over to adult vitamins.

YUM. That is all I have to say about Funley’s Delicious All Natural Super Crackers. These seriously taste like cheese its. Each pack is 100 calories with 4 grams of fat, 0 grams of sugar, and 2 grams of protein. I think these would be the perfect on the go snack for kids or adults! I know Cody would munch on these any day . . . as long as I don’t tell him they aren’t too bad for him! Haha

I was super excited about Bear Naked’s granola in the flavor Sea Salt Caramel Apple. I had gotten a pack of these in a coconut flavor before and was kind of unhappy because I’m not a huge fan of coconut – so I was way too excited when I pulled out this flavor. I had it with vanilla yogurt and a drizzle of agave nectar. I have every intention of ordering more of this.

I could write a dissertation length paper about my love of peanut butter, so when I pulled out the Mini Jimmy Bar in peanut butter clutter, I was so happy. Each mini bar is 90 calories with 4.5 grams of fat, 7 grams of sugar, and 2 grams of protein. I think this would be the right size for a pick me up snack when shopping, traveling, or at school. I really liked this!

The last thing in the box (and what I’m munching on as I write this!) is Mrs. Thinster’s Cookie Thins in chocolate chip. Each bag has 195 calories with 9 grams of fat, 16 grams of sugar, and 0 grams of protein. I really like these! They are super crunchy and not too sweet. I split the bag up into two munch sessions. Cookie thins are perfect for your lingering sweet tooth!

Marley’s First Cardinals Game!

Cardinals Game

I love watching baseball. I’ve been playing softball since I was four, but I have only enjoyed watching baseball the last few years.

The popular team around here is the St. Louis Cardinals. For some people, it is like a religion! haha!

My niece’s first game was a few weeks ago. She loves, loves, loves sports. Her last babysitter lived next to our local ballpark and would take Marley there to watch the high school, grade school, and summer league teams practice and have games. Marley watches the Cardinals on the telly sometimes and was so excited to go to the game.

My stepdad got us tickets on the first base foul line. Talk about awesome! The only downside was how hot and humid it was! I’m talking 98 degrees feeling like 110!

Better than Basic Blueberry Muffins :: The perfect muffin!

My mom’s birthday was on the second, and since she worked during the day and I worked that night, I knew I wouldn’t get to see her much, but I wanted to do something for her anyway. Cooking dinner was out, but breakfast wasn’t!

I decided to make something she could eat on the go, because she doesn’t usually have enough time to sit down for a meal. Luckily, one of my favorite bloggers – Taralynn over at Simply Taralynn – had posted a blueberry muffin recipe a few days prior.

Better than Basic Blueberry Muffins

I got up early that morning and made them! Talk about freakin’ delicious! These were the best blueberry muffins I had ever had! They were moist, rich, fluffy, and sweet!

I doubled the recipe so that I could send some with my grandparents and other family and it made 18 large muffins.

Blueberry Muffins

Ingredients (for muffins):

  • 1.5 cups all-purpose flour
  • .75 cups white sugar
  • .5 teaspoon salt (I used sea salt)
  • 2 teaspoon baking powder
  • .3 cup vegetable oil
  • 1 egg
  • .3 cup milk ( I used whole milk for added richness)
  • 1 cup blueberries

Ingredients (for streusel topping):

  • .5 cup white sugar
  • .3 cup all-purpose flour
  • .25 cup butter, cubed ( I softened mine to the point of almost liquid)
  • 1.5 teaspoon cinnamon

Blueberry Muffins

Taralynn suggested not to double the streusel topping because she had a lot leftover. She was right! I doubled it anyway so I could use the leftover in pancakes (yum!), and I had tons!

I also added nutmeg to the muffins and streusel mix. I love the flavor!

So for these muffins, you should preheat your oven to 400 degrees f and prepare your muffin tins and cups.

Next, combine the dry muffin ingredients and the wet ingredients separate, then combine. Gently mix or fold in the blueberries. I tripled the blueberries in my muffins and it was amazing.

In a separate bowl, mix topping ingredients extremely well until you have a crumb like consistency, first all the dry ingredients and then add the butter.

Fill your muffin cups to the top (to achieve that muffin top look when cooked) and then top with streusel.

Depending on your oven, bake for 20-25 minutes – or until golden brown on top. Remove from muffin tin and allow to completely cool on a wire rack before storing. I stored mine in an air tight container on the countertop and warmed them before serving.

Back to Blogging :: I finally have internet!

  
I haven’t had internet for over a week . . . It’s been beyond stressful! 

It’s made my first two weeks of school unnecessarily hard. I had internet at school, but I haven’t been able to stay late to post because of personal commitments. 

We contacted our internet provider multiple times, but to no avail.  They kept saying they knew the problem was on their end and that they would be able to fix it. They sent people out several times and weren’t able to fix the problem. 

My mom finally switched the physical phone line to a new one and . . . Our internet started working. 

The provider was wrong and the problem was on our end and easily fixable! It was so frustrating!! But now, I have plenty of posts to get up to you guys!
